Who doesn’t celebrate Cinco de Mayo? We certainly do! Any excuse to eat Mexican food and we’re in! To celebrate, I’m sharing my easy and delicious Mexican Street Corn recipe! It’s the perfect addition to any Cinco de Mayo feast and the kids will love it because it’s covered in cheesy goodness!
This may not be the healthiest recipe, but it’s a holiday after all! If you’ve never had Mexican Corn before, it’s essentially grilled ears of corn that are basted in a mayo sauce and covered in cheese. If you’re thrown off by the idea of putting mayo on your corn, I’ll admit that I was too. I’m not one to cook with mayo. I like using it as a condiment, but have never considered using it as a ingredient to cook with. When I initially tried the sauce, I hated it. It was so thick and heavy and just way too mayo-ee. So, I decided to add in some yogurt and OMG what a different that made! It lightened up the sauce and added a bit of tang which is exactly what this dish needed! In some recipes, sour cream is often used in combination with the mayonnaise but I don’t usually buy sour cream. Plain yogurt is a great replacement for it and I honestly prefer it!
Let’s talk cheese. Traditionally, Mexican street corn is made with Cojita cheese – a Mexican version of feta. Since I wanted to make this recipe a bit more convenient for families I decided to use a blend of cheeses that I already had on hand. I used a combination of Parmesan and a Tex Mex blend. If you had feta on hand, use that – it resembles the same texture as traditional Cojita.
Mexican Corn is the perfect party food. You can do some of the prep work in advance and come party time, all you have to do is grill the corn, lather it in batter and roll in cheese. You could even have a Mexican corn station if you wanted! Set up different sauces, butters, and combo of different cheeses for your guests to lather their cobs of corn in! Forget about a baked potato bar.. a Mexican Street Corn bar should totally become a thing if it hasn’t been thought of already! They finished product is so pretty to look at people will LOVE them!

Mexican Street Corn
- 4 Ears of Corn husks on
- ¼ Cup Mayonnaise
- 2 Tbsp Plain Yogurt
- 1 Lime Juice
- ½ tsp Chili Powder
- 1 cup Cheese Blend Parmesan & Text Mex
- ¼ cup Cilantro
- Salt & Pepper to Tast
For the Sauce
In a bowl, mix together the mayonnaise, yogurt, chili powder and lime juice. Season lightly with salt and pepper and set aside.
On a flat plate, grate your cheeses and mix to combine.
For the Corn
Bring a large pot of water to a boil. Once it’s reached a boil, generously salt the water and add in your corn, husks still on. Cook for 3-5 minutes.
Remove corn and set aside.
Preheat your grill and get it nice and hot.
Grill the ears of corn until they are lightly charred on all sides.
While the ears of corn are still warm, pull back the husks and brush the kernels with the mayonnaise mixture.
Once the corn is coated in the sauce, roll them in your cheese blend.
Top with an additional sprinkle of chili powder, fresh cilantro and squeeze of fresh lime juice. Enjoy!
